I’m excited to share this recipe with you today. Joe and I are two months away from our Italian wedding (more on that to come in future posts), and that means I am in full-blown “holy c*&^ I need to get in shape” mode. Nothing like the fear of putting on a wedding dress and having those pictures immortalized on your walls forever to get you motivated.
I came up with this smoothie recipe as an option for a healthy lunch. I have always been a picky eater and that has never been more true than when it comes to packing a lunch. I don’t know what it is, but I don’t like deli meat and I’m not a fan of packed salads, which has left me with limited options. For example, when I was a kid, I would bring mustard sandwiches to school. Yes – you read that right. Mustard. Sandwiches. It’s exactly what it sounds like, yellow mustard between two slices of bread. I’d pull that bad boy out at lunch time and eat it at my desk. It’s truly a wonder I had any friends. . .
For those of you who aren’t yet thoroughly grossed out (and wondering why you would ever take advice from a girl who ate mustard sandwiches), trust me when I say that this is a less disgusting / more adult alternative. I make this bad boy in the morning before work and pop it in the freezer when I get to the office. I pull it out about an hour and a half before lunch time and viola – a veggie and protein smoothie to help get me in shape.
You can’t taste the spinach in this smoothie, but it gives this drink its beautiful green color. The almond butter and banana together make this taste sweet, while the protein powder and chia seeds help keep you full. But don’t take my word for it, check out the recipe below!
- 1 tablespoon Almond Butter (I love Barney’s Bare because it has no added sugar!)
- 1 Banana
- 1-2 cups Spinach
- 1 cup Almond Milk (I use Almond Breeze Unsweetened Original or Vanilla)
- 1 tablespoon Chia Seeds
- 2 scoops Protein Powder (I use this Vegan one because Joe’s allergic to whey proteins)
- 7 ice cubes (yes, 7 is the exact number you need . . . I have tested this)
Put all the ingredients in your blending device of choice, and blend until smooth!
Don’t judge a smoothie by its color – as the old saying goes!
